CHOPPED GARDEN SALAD

Ingredients:

1 cup lettuce of choice, thinly sliced
1.5 cups beans, cut into small pieces and blanched/steamed
1 cup cucumbers, chopped
1/2 cup cabbage thinly sliced
1/4 cup onion, thinly sliced
1/3 cup toasted pumpkin/sunflower seeds
2 tbsp lemon juice
2 tbsp orange/grapefruit juice
4 tbsp olive oil
1/4 tsp cumin
1/4 tsp chile powder
1/2 cup crumbled feta
1/4 tsp sea salt
Black pepper to taste

Instructions: 

Mix veggies, feta, and seeds in a bowl. Whisk lemon, orange, spices and olive oil in a small bowl. Pour over veggies and toss evenly to coat.
