These are easy and a great crunchy, sour and salty condiment. They really add a special something to anything they are added to. Try them on salads, sandwiches, or tacos.
· 1/4 cup red wine or raw apple cider vinegar
· 1/2 cup water
· 1 tablespoons sea salt
· 1 tablespoon sugar
· 10 whole peppercorns
· 2 whole garlic cloves
· 1 bunch radishes, washed, trimmed & thinly sliced
· 1/2 onion, thinly sliced
1. Combine all ingredients except for the radishes and onions in a small saucepan set over medium-low heat. Take off of the heat once the salt and sugar has dissolved. This is your brine.
2. Place radishes and onions in a jar and pour the brine over them. Once the brine is room temp or cooler, seal the jar and place in the fridge for at least 30 minutes before serving. These will keep in the fridge for about 2 weeks.
