Arugula & Mushroom Pizza

INGREDIENTS

8 ounces Mushrooms

3 cups chopped fresh Arugula

3 cups grated Mozzarella Cheese

½ cup Romano Cheese

14 ounces Pizza Sauce

2 tsp. Italian Seasoning

2 tsp. Red Pepper flakes

16 ounces pizza dough (makes 2 12 inch pies)

INSTRUCTIONS

  1. If you are preparing your own dough, prep ahead of time. Roll out into 2 crusts. Place each on a pizza pan.

  2. Prehead oven to 425 degrees.

  3. Thinly slice 1 package of mushrooms and rough chop 3 cups of fresh arugula. Set aside.

  4. Spread sauce evenly over each crust.

  5. Place an even layer of sliced mushrooms on top of the sauce.

  6. Sprinkle 1 - ½ cups of chopped arugula on top of the mushrooms.

  7. Add 1 - ½ cups of shredded mozzarella cheese on top of arugula.

  8. Bake pizzas for 12 minutes or until cheese is bubbly.

  9. Sprinkle ¼ cup of Romano cheese, 1 tsp. of Italian seasoning and 1 tsp. red pepper flakes on top of each pizza.

  10. Cut into slices and serve.

*Note: If you prefer raw arugula, you can add it right when the pizza comes out of the oven. It will warm and wilt and give a delicious peppery flavor.
