Mixed Herb Potato Salad

Serves 8

For The Dressing
3/4 cup canola/olive oil mayonnaise 2 tbsp Dijon mustard
2 tbsp red wine vinegar
1/2 cup fresh basil chopped
2 tbsp dill chopped
3 tbsp rosemary chopped
1/2 tsp sea salt
1/2 tsp black pepper
For The Salad
3 pounds small red potatoes
1 cup red onion thinly sliced

Boil potatoes about 30 minutes. When the potatoes are done, drain and cool in the fridge. In a large bowl whisk together mayonnaise, mustard, vinegar, herbs, salt and pepper. Once potatoes are cool, cut into quarters. Add onion and dressing to the cut potatoes. Gently mix until all potatoes are coated.
