Roasted Chayote Squash

Ingredients

  • 4 chayotes

  • 2 garlic cloves, mashed

  • 1 teaspoon cumin

  • 1 teaspoon chili powder

  • 1 teaspoon coriander

  • 1 teaspoon salt and pepper

  • ½ lemon, juiced

  • 1 Tablespoon olive oil

  • 2-3 Tablespoons coconut oil

  • Instructions

  • Preheat oven to 450˚. Mist a cookie sheet with non-stick spray.

  • Combine chili powder, cumin, crushed garlic, coriander, salt and pepper into a small dish and set aside.

  • Peel chayote. Cut in half lengthwise and remove seeds.

  • Cut into wedges and sprinkle/rub evenly with the spice and garlic mixture. Place wedges on a cookie sheet and brush lightly with coconut oil.

  • Roast 20 minutes, flip wedges, and roast for an additional 10-15 minutes, or until golden brown and tender.

  • Drizzle with lemon juice and olive oil and serve immediately.
