Sautéed Mustard Greens

Ingredients 

  • 1 bundle mustard greens

  • 1 small onion (sliced)

  • 1–2 tablespoons coconut oil and/or bacon grease (ha!)

  • Juice of ½ lemon (or to taste)

  • 1–2 teaspoons maple syrup (a light drizzle)

  • Salt and pepper (to taste)

  • Optional: your favorite seasoning blend

Instructions 

  • Wash the mustard greens well and shake dry. Roughly chop if desired.

  • Heat coconut oil and/or bacon grease in a skillet over medium heat.

  • Add sliced onions and sauté until soft and lightly golden.

  • Add mustard greens and cook until wilted and tender.

  • Finish with a squeeze of lemon, a drizzle of maple syrup, salt, pepper, and any favorite seasonings.

  • Taste, adjust, and enjoy—simple and scrumptious.
