Bubble and Squeak from Gracious Neighbors Alex, Melissa and little Cecil

INGREDIENTS

2–3 medium potatoes (or leftover mashed potatoes)

1 cabbage, roughly chopped

3 tablespoons butter

Salt and pepper, to taste

INSTRUCTIONS

  • Bring a large pot of water to a rolling boil.

  • Parboil the chopped cabbage for 3 minutes. Meanwhile, melt the butter in a large pan over medium heat.

  • Use tongs to transfer the cabbage to the pan with melted butter. Let it fry gently, stirring occasionally. Allow it to start caramelizing, but avoid burning.

  • While the cabbage is frying, add the potatoes to the boiling water and cook until tender.

  • Once the potatoes are cooked, use tongs to transfer them into the pan with the cabbage. Add a healthy pinch of salt.

  • Use a potato masher to gently mash the potatoes into the cabbage. Stir occasionally with a spatula to combine everything into a loose, pancake-like consistency.

  • Continue cooking until the mixture starts to brown and you hear the signature popping and squeaking sounds—this means the water is evaporating and the edges are crisping.

  • Add salt and pepper to taste. Serve hot and enjoy!​
